not a huge diff honestly. i have some $65 tee and you're mostly paying for the fabric which might feel better but it wont look that different. the other thing you're paying for is small details like stitching on the hems, collar shape, the cut of the shirt, etc. things that are barely thought of on average t shirts. if you feel those details are worth it, then go ahead. they are usually very subtle differences though.
i got a bunch of gap tees for $4 each and i wear them probably more than my $65 shirts (which i baby lol) and they accomplish the same thing. if i had the money though, all my shirts would be the expensive kind.

pretty much the same can be said for jeans. i have pairs from $120-220 and i paid more for the small details. i HATE flat felled seams, pocket details, stupid red tabs on back pockets, etc. selvege jeans usually also have longer inseams, and they're raw, which is kinda stupid to me now, but i'm still not washing my indigos just to see how they turn out.
