Yes, exposure to sunlight, the products you apply to it, and a multitude of other things will change the color of leather over time.

So I'm deciding between two options:

Either pic related from Next for £70 and some new A.P.C. jeans, or the Fred V from Grenson for £150.

I know the Next quality is likely shit and the Grenson's would be fantastic, but it's just the sole of the Grenson that slightly bugs me - it just seems slightly too bulky or our of context? The shoe itself looks amazing to me, but the silhouette of it looks like it might be too much when I actually wear them, whereas I know how the more conservative Next would look

He probably means that they fit slim to the calf like this

>>7045484
to answer your question, docs are probably your best bet in that price range, although you may want to check out some milsurp and see if they have any foreign para boots (German ones are quite good looking).

Unfortunately para/ cavalry boot sort of silhouette you're looking for is rather rare right now outside of the avant garde (Ann D makes some killer black leather knee-highs that retail between 1600 and 1800)

Oh and Corcorans may look nice in pictures but in reality the toebox is obnoxiously huge and their overall silhouette is not slim at all.
