What's a good pair of beginner cowboy boots? I don't want anything too fancy. Something that will last. Mainly going off RDR2 for style inspiration.

i would recommend roper boots over cowboy boots if your going to be walking most of the time. either way tecovas are pretty good. they were my first pair, not too expensive, not ostentatious, and will definitely last with care.
