The Patek is the most generic but also the one with the best resale value. It's pretty much an office watch.
The Breguet is more a dress watch, very clean. So it's between those two depending on if you want a dress watch or a daily watch.

It's just virtue signaling from watchfags.

FP Journe is one of the most skilled watchmakers of all times. He became famous for his "Chronomètre à Résonance", a watch with an insane movement that was theorized centuries ago by Abraham Louis-Breguet. Journe succeeded at building it (among other watches with crazy complications) and now he's kind of a living legend in the watch community. His watches also have a very distinctive style, that only true "watch enthusiasts" can recognize.

The thing is, FP Journe also makes very traditional watches like the Chronomètre Bleu. It was "affordable" a few years ago but now it sells for 4 times its retail price because of hype and "muh quiet luxury". The watch itself is nothing crazy, but Hodinkee and other medias have decided it's a modern icon.

People who say it's their "grail watch" don't even understand why. They just like the idea of having a grail watch that isn't a Patek or a Rolex, that's still praised by the "right people" (ie Hodinkee and Revolution Watch editorialists).
