I'll assume you're looking for more pianists and not just cool jazz artists.
To start, you could look at Bill's other discography that's not just with his trio. Like his sessions with Chet Baker, Stan Getz, Tony Bennett, etc.
As for other artists, Keith Jarrett and Oscar Peterson are good, but their live stuff can be annoying to me 'cause they tend to moan and grunt a lot with their playing. Herbie Hancock was inspired by Evans, but his stuff is more funk than jazz I think. Ahmad Jamal is also pretty good.
