I'll give you some labels for inspiration.
This first list is all pretty expensive or rare because it's handmade so use it more as inspiration.

Paul Harnden - Pretty much the epitome of this style. Features a lot of shrunken peasant garb in carefully treated fabrics. Known for not selling anything online ever.

John Alexander Skelton - More 'vintage' fabrics and cuts with inspiration ranging from peasant to gentry. Again, handmade with attention to small details. Uses a lot of older models in shows/lookbooks.

Inaisce - Now shuttered NYC label with a kind of future nomad look. Meticulous cuts and draping with a strong attention to materials and silhouette.

Aleksandr Manamis - Anonymous designer/design team heavily influenced by the English Romantic poets.Leans more toward the romantic artist look but has peasant/workman pieces such as the iconic burned miner hat.

As the other dude pointed out natural materials are your friend. Wool stuff is pretty easy to thrift. Linen is not as widely used these days but you can find more designers selling linen pieces in the summer months.

Part two is focused on Japanese designers. The Japanese have an entire subculture called mori that involves attempts to look like you live in the forest. The female version, mori girl, is much more common but mori boy is a thing too. The good thing about a lot of Japanese clothing is that it's pretty cheap with regards to the quality you're getting and they have a lot more kind of, for lack of a better word, twee labels for both men and women. Unfortunately it's something of a process to get stuff from Japan in the west since a lot of it never leaves the country. You'll need a proxy service like From Japan but you have access to really good second hand sources like Rakuten and Yahoo Japan.

Trove - The classic Mori Boy label. Known for their relaxed fits and twinky models.

Kapital - The classic Japanese we jerk off to old peasants label. Has a staggering range of clothing ranging from fantastically patched pantaloons to more trendy denim jackets. Currently having a moment with the workwear crowd.

Haversack - Very similar to Kapital. Has a bit of a military influence as well.

The Soloist - Personal pet project of Takahiro Miyashita, creator of classic label Number (N)ine. Miyashita designs for himself and is one of the few designers I can think of that wears mostly his own stuff. The Soloist is kind of avant garde workwear with a focus on materials and distressing with playful details.

Of course. That's why this kind of stuff is for inspiration only. Dressing up like a lookbook photo is a larp. Just pick and choose bits that you like and try and incorporate one or two into your style.
