I'm a seagull with a bf lightly interested in fashion and I want to help but don't know much about western fashion cause weeb. I think he'd look nice in pants like pic related cause he's pretty thin. What the hell should I look for to find pants with this type of fit? Is it called slim or straight or what? I know I'll have to take him shopping to see what looks right but having a jumping off point would be helpful. Thanks guys

Every manufacturer is going to have their own terminology but we can make some generalizations:
Straight is a kind of basic box shape from which other fits are modified
Slim is tighter fitting than straight and is tapered, meaning the leg shape gets narrower towards the ankle.
Skinny is tighter still, at this point you may as well be lending your BF your jeggings.

Some of the models you are posting have pronounced "stax" where the denim bunches up around the shins. This indicates a severe taper in the jeans. This was a huge meme a while back and there are even weird J-shaped skinny jeans for maximum staxx if that's what you're into.

What do if my size is in between 2 available sizes or slightly less/more than an available size? should I go for the bigger or the smaller size? I like the skinny fit ones.

Western men's fashion is generally sized in direct measurements.
If a brand doesn't have the thigh and cuff measurement you want in your waist size, you'll probably have to find another brand. Tailoring is also an option although it can get expensive if you're having them deconstruct the entire pant to get the fit you want.

The thing here is. They all have one thing in common and thats their skinny legs. Most of the pants theyre wearing are slim but they fit skinny due to the lack of muscle/fat they have on their legs. Be true to size when you buy any kind of jeans. If youre 30 waist and 32 inseam then buy that, go down a waist size if you want the jeans to be tighter and go up the size on the inseam if you want it to stack
