Yeah I definitely have. Just make sure they fit well. I often double sock in mine cause the sizing is a little weird but I've been all over in mine. I usually wear mine with chinos or jeans. Basically just standard prep pants, and nothing too crazy or adventurous. Something like waxed denim would look weird.

I've seen plenty of boots like you're talking about but I can't really remember what they were. The sole you're looking for is generally called a wedge sole and it's often made of crepe rubber as seen on the Rick boots you posted.

If I were you I'd save up for a pair of Ricks or Guidis. Both are extremely good quality and getting exactly what you're looking for will be much better than settling for a cheaper pair that aren't as nice.

Guidi does custom work so even though they have only done a few wedge sole options you could have a pair made for you.

Canvas Baggy is good enough
the sole rubber lasts long (so long as you don't intentionally grind the shit out of them)
and the canvas is durable (waxable) and the dye will fade at the creases making them look better

if you really want proper leather milsurp, "Belgian" boots are decent

I'm waiting on delivery of a pair of 8 eye Solovair Derby's, and you've piqued my interest. My ankles are quite slim, so usually getting boots on or off takes a little time.

To compensate, or maybe out of laziness, I often just don't lace the top one or two eyes, but the idea of replacing the top two eyes with speed hooks sounds like it could be a cool compromise.

Depending on how I lace them, they might look weird, but I'm sure there's a way around that.

How hard is it to install these myself? I'm pretty handy, but I'm also not afraid of just going to a cobbler.

Any pics of this irl? A quick Google search didn't show me anything...
