Why don't you slowly increase? Start by splitting the difference between what you're eating now and what you technically need to maintain. Do that for like a week or so and see how your weight responds. Then, split that difference again, and so on. You'll figure out the sweet spot soon enough. Well, two things. On one hand, I do eat basically the same every day. I add some variation, but maintain the same schedule and framework for each meal.
On the other hand, it's more important to look at the calories/week overall than per day. It's fine to fluctuate day to day, as long as you're on target by the end of the week. This gives you some flexibility for going out with friends, drinking occasionally, etc. As long as you're consistent week to week, that's totally sustainable.

Today was a good day.

I managed to only have half a litre of skim milk and a bagel for breakfast (~600 kcals), another bagel for lunch (another 400 kcals) and nothing else.

I just had dinner now, which was tortelini (~250 grams or 1000 kcal) and around 200 grams of grated cheese ( another 600). plus some condiments and oil (another 200?). I'm also having some fruit before bed (~100 kcals?).

All in all this puts me around my goal of a bit over 2500 per day.

Not necessarily. You can be really healthy and not eat every time you're hungry. Yeah, I hear you. You sort of have to add the days though, to see where you're at towards the end of the week. That way you know if you need to take it easy on Friday, or if you can have a couple beers, or whatever.
Once you get to a good level of maintenance, why don't you figure out a general daily meal structure so that you can transition for calorie counting to everyday habit? Then just weigh yourself weekly to make sure you're on track, and adjust as needed. It'll become easier and easier to tell if you're on track as you get used to a daily eating pattern.

Mine is ~1700. It's really not too bad. If you know you're gonna be going out later, then eat less earlier in the day, or the day before if possible. In all honesty though, running or long walks would be really good for you if you wanna be drinking a lot of beer. As far as desert goes, I eat it every day and still stay within my 1700 calorie limit. Just don't eat huge portions of stuff, and try to limit the amount of calorie dense stuff you eat in a day.

Try reducing your portion sizes gradually. Bring 4 eggs down to two. Pasta tends to be fairly calorie dense, so don't eat a whole bunch of it if you're planning on drinking beer later. Trade cheerios for veggies with hummus instead. If I have 4 eggs for breakfast, I'm hungry like two hours later. a CUP of pasta is 200 calories, yeah I can get some healthier version for home but not always eating at home so I figure high. Just gotta get used to the feeling of hunger, I guess. I know it sucks, but think of that feeling as progress toward your goal. Eventually you'll get used to it. Make sure you're drinking at least 3 liters (12 cups) of water a day. I'm sure you already know that drinking tea or coffee will help reduce feelings of hunger. Seriously though, healthy shit is your friend. I know they're not what you want to eat (seriously I would kill for some chips and salsa right now), but you can eat a shit load of petite carrots or snap peas for fewer calories than 3/4 of a cup of chips. And fruits and vegetables will keep you full longer (things with fiber or protein in general work better than carbs for lasting feelings of satiation).

And yeah, it's cool dude. I know how you feel. The struggle is real but as time goes on it does get a bit easier to deal with being hungry. The key is distracting yourself with other stuff, eating things that aren't super calorie dense, and drinking lots of water. It's also a good deal more psychological than most people think.

The biggest motivation for me is really keeping this thread open, at least on a tab on my phone, to serve as a constant reminder. But, in the long run it's important to not beat yourself up when you slip up, it's a marathon not a sprint. Make sure you are eating enough, if you are doing some crazy 600 calorie diet it's very hard not to have binge days, if you have are eating like 1400 with a tdee of 1900, then it's much easier to maintain motivation.

Fair enough. All I can suggest is that If you're counting calories, you should count everything. I've made the mistake of not counting everything thinking 'oh it'll be fine' and it's generally backfired. If you're still hungry at that caloric intake, just load up on veggies to at least get up to 1000 because they're low on calories but still really good for you. That's still very low but you'll have a bunch more nutritional content in your diet. Malnutrition blows, I've been there and it makes you feel super shitty and your body does weird shit (I get mouth ulcers).
