Don't use "I'm a girl" as an excuse to not try.
Electrical engineering and mechanical engineering are workhorse degrees. You can easily get a job out of college, and your knowledge allows you to get most any engineering masters or doctorate if you want to pursue that.
Degrees like biomedical engineering or chemical engineering have the intention of grad school. Still pretty easy to get a job out of college, but a worse job more likely, and it's kind of a waste of the degree.
There are plenty of I'm between as well. Aerospace engineering is a lot of both. Civil engineering is pretty hands on and utilitarian. Not as much room for graduate work.
Mostly, though, you should pick a field that you're interested in. Most any engineering degree is a good degree to get, so basically your drive to study it is what should make your decision.

It's similar to an english lit. degree in the sense that you'll probably end up teaching it (nothing wrong with that).

Like I said earlier; it's a valuable field of knowledge that I personally feel is more important if you do it on the side then apply it to whatever it is you're doing otherwise. Take a stray course and read the real stuff, you don't necessarily need a professor to tell you what's what if you dedicate some free time to it. I'm personally heading into STEM (medicine), but philosophy remains a major interest of mine and I'm absolutely certain it'll be an asset in life.

I'm in a fortunate position, whereby I can pursue any academic pursuit I want due to free education and a secure financial situation. As such, I decided to study what I love, without even considering a career at the other end. I'm enjoying academia for academia's sake - it sounds contrived but the pursuit of knowledge makes me happy. And because I go to a good university, I know that, regardless of my degree title, I will be able to get a decent job that I enjoy.

I am always saddened to hear about people in other countries that decide not to attend university because of financial constraints - it simply isn't fair.

I love it. Its a field ive been interested in since I was young, after my father died. Half the job is helping the families with the grieving process, and the woman who ran the funeral home my fathers service was at, helped me tremendously(went above and beyond. She was very sweet).
Its not a tremendously difficult subject to learn, its just a subject many would like to avoid. Not everyone wants to learn about embalming and preservation. The only problem though is the smell and you get over it pretty fast. Looking forward to running my own funeral home eventually.
