Never got the whole "meme" and "fedora boots" complaint when it comes to those boots. Redwing makes solid, good looking boots and, while the quality of Doc Martens have really gone down, they're still better than anything you'll find in the average department store. Boots have always been a fashion staple, yes even "work" boots. Just because they've been in vogue for a little while now doesn't really mean much.

Basically, 4chan in general has a fairly negative opinion of reddit and the subreddit /r/mfa. /r/mfa is very boring most of the time, but not inherently awful. Redwings, which have been worn in a fashionable, if not more rugged, sense for a long time mind you, are very popular there. The boots are fine it's just /fa/ holding a one sided grudge.

I think it depends on what you want to wear. If your going for Americana workwear core or something a bit more rugged go for the chocolate apache. If your going for a bit more dressed up / flannel core (mfa ish) I'd say the cordovan because it's sleek.

I'd also so wait a bit on the shoes as I got the chocolates for I think 80 and the cordovan for 120 during amazons sale ( a couple of weeks before christmas)

That's true, but I still think it's pretty popular in general. I totally agree with still wearing the boots though, trend hopping doesn't make you fashionable. Fashion is one of the best ways to express yourself, and there's nothing inherently wrong with any particular aesthetic if pulled off in a tasteful way with a dose of confidence in your look. If the Americana look really resonates with someone, by all means they should take inspo from it.
