RM Williams if you're into that, otherwise Buttero/Wolverines/Iron Rangers/Timbs/Chippewa (in roughly descending order of recommendation/'quality')
Some you can source in Aus, otherwise work out your size and order online.

I'm not sure how practical this advice would be, but canvas shoes could be coated in hydrophobic spray to reduce soaking. Scotchgard or the Australian equivalent.
