It really depends on how you wear them/lifestyle etc.
You can get solid fades on just about any pair of modern jeans with time and wear.
Most of the brands using unique denims are Japanese.
I'm guessing you don't wear your jeans too hard, RT and 3Sixteen are both great American brands that use midweight denim that I've seen to fade nicely.
I've been a Left Field fan for years so I recommend them, Christian sources White Oak Cone, and some interesting denims from Kuroki and other Japanese mills occasionally.

Between Blue Owl, BiG, and SE there is a wide range of quality jeans to choose from.

I have slim tapered double black, I've owned unbranded 201 and levis 510, 511

higher rise, thighs in between 511 and 510 depending on how you size, calves the same as 201 or 511 ish, bigger than 510s

I'm very happy with em, would highly recommend especially if you like the higher rise. however I'm going to have to get the calves tapered more (same deal with 201 and 511 for me, if those work ok then you'll be fine)

Before Evisu sort of revived the whole denim-fetish as a mainstream phenomenon, selvedge denim would've been a pretty good indicator for the quality. This isn't true anymore though.

A pretty general misconception is that selvedge denim can only be woven on vintage shuttle-looms, but that's just a myth. The chingy chongy chinamen are producing buttloads of selvedge denim these days, and the quality is horrible.
If you want to know anything about the quality of the denim, find out where the denim is sourced from. For starters, Cone Mills in US, and in Japan there's buttloads. A select few of the good ones: Okayama, Nisshinbo, Kaihara, Japan Blue Mills and Kuroki. But there's lots of good mills in JP.

Not the guy that posted that but I have a pair too. They are really great, just make sure to the right size. Nicely tapered by the ankle/calf, no billowy excess fabric like most "skinnies". It's actually such a perfect fit that I had trouble getting my heel through the leg opening for the first week or so. Def. uncomfortable at first but once they break in and conform to your body they feel so right. Also hold stacks/creases well. Smell like shit for at least a month tho, sulfur took a long time to air out.

Get whatever feels most comfortable. N&F denim should come in a 36" inseam, so given your stature, hemming is absolutely ncesessary. Just have them hemmed so that there's decent stacks, without making the jeans look unfitting.

Given the nature of the fabric, I would go out on a limb and say that it's more like the skinny guy. The super skinny appears to be crafted from fabrics with 2% elastane, making incredibly skinny fits possible. RT SK is 100% cotton though, like most skinny guy jeans.

They have the exact measurements right next to the picture. Just measure your waist and buy the size with the closest waist measurement. I wouldn't worry about sizing down or anything either, I bought my stealth sk's pretty tts and although they do stretch a bit to conform to your body, its nothing drastic. I've had em about 6 months with no washes and don't need a belt or anything.

Not sure, never had N&F before. I wear a 30 in 511's though and got sz. 28 sk. But foreal man, just take a minute and measure your actual waist size in inches and just match it up to the size measurements they have posted online. thats gonna get you the best, most accurate fit.

Nah I don't think they had that option when I bought mine, only true black denim they had was stealth and the 13.5 oz. black I mentioned earlier. Dark makes me think they might just be a dark indigo tho, unless its a collection like stealths are.
