Cableknit sweaters, wool trousers, sandals, wool socks, wool anything, marled/melange textures, off-white layering pieces will become your best friends with all the dark earth tones you're bound to own, shearling lined jackets, chore coats

I personally avoid the denim aspects of workwear apart from jeans. I just don't like the texture enough to wear it on my torso. I prefer comfier options.

i don't really like denim all that much but i feel like i need the jeans to balance out the earth tones i'll have on my top/feet

Desert Malis are pretty modern looking imo.
Wouldn't really suit the described aesthetic.

It's over your budget new, but Filson makes hands-down the best traditional outdoor shirts. Check eBay.

Boots? They're mostly at the top end of your price range or slightly (like, <$100 over), but Russell Moccasin is tops. All custom made from a tracing of your foot.

Color palettes? Read up on color theory. It's a quick study, and it's everything/the only thing you need to know about color as a physical thing. Color as a sign is much more intuition based, equally obvious and infinitely plumbable, learnable only by looking and feeling.

As far as what else you can wear? Whatever fits your vision. There's no rules for any of this. What's your vision? Guy driving out of the city for a weekend in the Catskills, or EB White up to Maine? Thoreau? Pacific NW fur trapper? A British hillwalker sheltering in a bothy overnight?
