If the PRX is what you're drawn to, then get that. They don't scratch particularly easy, or, not like a Cartier Santos at least. If you want something more robust get 1k+ Seiko Prospex with the Diashield coating, but honestly you probably don't need it. The PRX should be fine and as you gravitated towards it anyway it's probably for the best you get that. Only point of warning! You won't be able to tinker much with some parts of the watch movement yourself, but dunno if you care about it.

For major services I think so, yes. One thing to note is that there is a certain hierarchy to the Powermatic 80 movement in the PRX, the PRX uses the big standard version (which is still fine enough mind you), something like the Tissot Gentleman uses an better version, and so on and so forth. But for all intents and purposes the PRX should serve you well, even with a plastic mainspring.

METAS Master Chronometer certification includes a test of accuracy at both 100% wind and 33% wind in six positions.

As long as you have the right size it's not hard at all. Swapping from a plexi crystal to sapphire is difficult because the plexi is held in tension in a way the sapphire is not; however, if you have a mineral glass Seiko and get a replacement aftermarket sapphire, you could do it yourself with a crystal press. The only thing stopping this watch from being 36-38mm is the movement. They can't seem to get their day module any smaller and they don't want to shrink the dial and compromise on the second and minute markers at the top of the dial. But if they could find a way to get the movement smaller and get this and the jazzmaster daydate down to 37mm or 38mm diameter they could sell millions of these things.
