Glycine seems to be really underrated, especially when compared to other watches in its price point.

I like the look of "pocket watches but on the wrist"; i.e. large diameter, off-white dial, lacquered numerals, and high horology movement finish.
Examples are Moritz Grossmann, Urban Jurgensen, Vacheron 1921, etc.

For the price that's a pretty cheap balance wheel, with lever adjustments instead of microstella. Even the cheapest Omegas uses microstella. The lever adjustment is also the first thing people look for to determine if a Rolex is real or fake. The movement is designed to look nice, purely form over function, the movement looks nice but its no high horology.

No because having a lever adjustment is just lazy, IDK how it managed to pass COSC or if it even has COSC. Here's what a high end, well not the highest end, balance wheel looks like. 4 microstellas, this is why GS is slightly more accurate than Rolex who only uses 2. Using a lever to adjust accuracy means the watch will eventually loos accuracy over time or with shock. Might as well put in a Miyota movement if they're going to be this lazy.

The silver dial is way more shinier than the black dial, that's a given. However it doesn't really go well with the rest of the watch seeing the case and band is entirely all brushed matte finished besides the bezel. So you're looking at a very subdue watch except for the super shiny two tone dial. I think this is what they were trying to do with the OP especially for the enamels, but for me at the store it doesn't really work. It would have worked better on a two tone IMHO.

Hell Rolex had almost a 100 years head start so its understandable really. Seiko yes, but not Grand Seiko. You cannot fix a Grand Seiko at a Seiko repair center. Again GS are supposed to be way more accurate than Rolex out of the factory. However there are many factors that can affect this things like bumpy shipment or the user being more vigorous than anticipated. And if it's not too inaccurate Seiko would just deem it in spec because it costs way too much to ship it back to Japan.

But from an engineering standpoint GS is supposed to be more accurate than Rolex.

This sounds like you're trying to turn your wishes into reality by insisting really hard.

If Seiko wanted to make a GS that was better than -2/+2 spd ... then they would do so. It's irrelevant what the watch can theoretically do.
If you buy a Rolex and a GS and both are running 3 seconds per day fast, Rolex will fix the problem on their own dime, Seiko will tell you to piss up a rope.

Also, accuracy It's not just a matter of the regulating mechanism either. So counting the weights on the balance wheel is a little silly. The tolerances in all the parts have to be tighter. That's why it's much easier to get a Rolex to be accurate than it is some Chinese shitter. You may be able to regulate the shitter to be perfect in one position and at one state of wind, but that's the best you can do.

How viable is it to buy a watch with none of the original documents or the box on chrono24

Buy the seller, not the watch. If the seller is a dealer that has sold many pieces without complaint, then it's probably safe. If he's just some guy selling his own watch, that's risky. Even if he's not trying to scam you, he might not know he has a fake, having been scammed by someone else.

FWIW, eBay has a thing where any watch over 2k gets inspected for authenticity before being delivered. It's safer, but it usually has slightly higher prices as well.
