Datejust is a fine watch, however it's not a dresswatch. Aside from that I have no better idea than the classic DJ36 with a funky dial like the palm motiv you posted.
Maybe a double stamped dial like the Dominos Air King would be a nice twist on the classic Rolex side?
Have you considered the recently retired Oyster Perpetual 39 mm line? They made a number of nice sunburst dials with unusual base colors like dark blue or purple that are totally different from the current Stella dial OP36s. Iirc they come with a case width of exactly 38.5 mm.

Realistically, a Rolex is probably the best thing to simply just impress non-watch nerds, but some potential alternatives:

Cartier is also a brand commonly known among the broader population, especially among women.

You could also get a more typical, minimalist dress watch, probably from the secondary market though since most retail from just above 20k, from Patek Philippe, Vacheron Constantin, etc.
It's the sort of watch though that will be inoffensive but nobody that is not way too deep into watch will give it a second look, I think.

I like it as well, I tried it at an AD(put my name in for a Rolex Datejust SS in slate/green who knows when I will get the 'call') and it felt like my old Tag 2000, something not too big on my wrist except with Tudor quality. Overall I'll probably go back and get it once I get my first real watch.

Datejust and Oyster Perpetual value fluctuates the most out of the entire line up. I think the ones that held the most value are either the GMT and Subs. Don't bother with a Daytona unless you get it from an AD, the 2nd hand price on them is ridiculous right now. Another option which you can buy for cheap(sub5k) is the Explorer I either in the original 36mm or even the 40mm(baby T-Rex hand version).

lange has pros and cons
a major pro regards servicing: other richemont brands suffer from servicing que clogging as they all use the same richemont service center
lange is german and goes back to the one german factory so there's no wait and the qc is high
additionally since their output is waaaaaay less watches per year than say patek - iirc a couple of years ago it was something like 10-15k watches per year vs patek's 60k+++ per year - means that even the basic lange is very highly finished whereas patek has become incredible sloppy and rests on their laurels
partially because they increased output without the watchmaker manpower to back it up and servicing is done by trainees who suck

there are also many cons, but they are the intangible kind whereas their pros are more material
but people do not spend 10's of thousands on deprecated tech purely for tangible, logical reasons:
