Any polishing will round the edges, it's just a matter of degree. Obviously Rolex will do a better and more careful job than some random guy with a polishing wheel, but they are still removing material from the case/bracelet to make it look shiny and flawless again. I have maybe 17, 17.5 cm wrists, although they are kinda flat and width, and my palms and forearms are thick. Tried 38, they look kinda non existent on me. The dreaded 42+ is were its at for me.

I prefer plain white dials, especially real enamel ones. They are hard to make, something like half of the enamel dials crack in the oven during manufacturing and are discarded. That's why the real enamel dials are more expensive and sought after than dials that mimic enamel (usually made with a white lacquer)
