Any polishing will round the edges, it's just a matter of degree. Obviously Rolex will do a better and more careful job than some random guy with a polishing wheel, but they are still removing material from the case/bracelet to make it look shiny and flawless again. Since forever? I should have said high end dress pieces. There is a reason why stainless patek is collectable - there wasnt very many made in the 40s, 50s, 60s. Even cheap watches were gold fill or plated to emulate the look. From the birth of the wristwatch with cartier etc, watches were considered jewelry as well as timekeepers and they were cased accordingly. Wasnt until the 60s where tastes began change.
