I'll often use other subtle cues like not fully buttoning my shirt, to indicate that I'm not a "buttoned up" kind of guy ie not a pushover like a typical employee, but a self-confident alpha boss who calls the shots.

Collars were originally part of military uniforms. They were worn up when on duty and folded down to hide insignia when off duty. Various other clothing copied the collars when "off-duty military officer" was common enough to be recognizable yet also something aspirational. By the time polo shirts appeared the military association and the original reasoning had long vanished.

Collars are to catch sweat. Polo shirts are for tennis are similar juppy sports where sweaty clothing is disliked. Polos also have that cuff on the sleeve to catch sweat from the armpits doesn't drip down the arm.
