The subdial font is awful, the chrome rings around them are awful, the shiny-ass bezel with the bad "TACHYMETRE" font is awful, the weird shiny Omega logo is awful. These are already enough to ruin it.

I just got an SNKL43 as my first Seiko, so far I like it. A little annoyed there isn't any manual winding but otherwise its quite attractive. Theres a number of variations of it too; slightly different hands, different color dials, its a sub 38mm watch too. Looks and feels great on the wrist.

Another one to check out is the Orient Bambino II. Inexpensive, Japanese movement I think assembled in China. Still looks attractive and seems to fit most of what you're looking for too.

Here's the sub, and the changes are basically to get it back in line with th vintage. I belive if Rolex did this, they'd sell for 5x retail and there would be a wait list 20 years long. If they really wanted to print money, they'd also allow you to change bezel inserts and dial colours, but one step at a time.

The little details you're scrubbing off are part of the reason why people would buy a rolex over some no-name brand and add to the character of the watch. Part of having these luxury watches is having their features shown off. Which brands such as rolex like to emphasize. You can also streamline a design and oversimplify it.

It's not a mystery, swiss bracelets are built to tight tolerances so they are extremely stiff and require a micro adjust to be even wearable out of the box. Japanese bracelets are built with some play in the links so they wear "soft" out of the box and don't require a micro adjust to be comfortable. Since GS (and JDM watches in general) were memed to westerners by social media, almost everything you hear about them is just something everyone read somewhere online. Some of it is true, some of it is somewhat true, some of it is subjective but repeated as objective, and some of it is just plain wrong and weird, like the "acktchyully it's a capacitor not a battery" meme for solar watches.

Anyway "no effort for the owner" and "no effort on the part of thee manufacturer" are two very distinct concepts, but autists who love fiddling with mechanical things are prone to confusing the two.
