Off the rack shoes can’t fit everyone.
People heel to ball ratio, heel size, ball width, etc differ.
Each makers employ different lasts. Someone can fit size 7 in one brand fine, but won’t in another brand’s 7.
If that last RMW uses don’t fit you well, see if they have anything else or move on the another brand.

For future purchase, learn your feet features, things like high or low instep, heel size, ball width, arch, heel to ball measurement, relay those infos to the brand, ask them to describe how their last fit to you.

Ultimately, this takes trials and errors, you just have to get the shoes on your feet to know for sure. It helps to work with retailers who can offer return/ exchange.

What is happening here might be that the last heel to ball ratio is farther than your feet’s, so your feet widest part is actively sliding up that point, making slippage happens.

Either buy one of those glue on heel piece in smaller size or get a cobbler to stitch a piece of leather to the heel to bulk it up. The heel tabs you use is too thick, thats why it feels cramped.

Which size boot should I get? I traced my feet, and they're about 27cm long and about 11cm wide at their widest. I did it barefoot, should I redo with socks?

What I like about them is that they're flat enough to where it does not interrupt the contour of the inside but thick enough where it can fill out an extra quarter to half size, no problem. They're also soft enough to cut with scissors if they don't fit in the toe box.
You can find leather inserts pretty cheaply (<50 bucks) if you visit any red wing store and ask for them. They won't mind that you're using them in Chippewa boots one bit.
