Let say the build is similar, then you have to factor in extra labor cost.

Labor for what? Finishing of course. Dress footwear should be finished nicely, it's in the name. Clean finish takes time and factory hates to slow down.

Beside, why should dress shoes be built like clown shoes with thick midsole and wide ass stitchdown?

If you care about quality, just stick with the minimum: leather insole with any forms of stitched construction. Leather midsole if it's your thing but can be optional.

Thoughts on C&J coniston in rough out suede as a general winter boot? There's a local shop with a discount down to £350 atm. UK so no real snow/ice, just a bit wet and cold. I assume you can rewax to protect it rather than using conditioner like for other leathers. For a casual style with jeans, corduroy, cotton chinos, not for work - I've got a pair of suede chukkas and other derbies/oxfords for more formal stuff anyway.

Suede won't crease
Cordovan won't crease but its weird behavior might arguably look worse to some.

Normal leather will always crease, but creases on patent leather will always be worse because of how it's made.
Also cheap leather that is coated with plastic/acrylic etc (most leather out there) will have the same problems as patent leather if not worse.

Even among proper full grain leather there are differences in creasing based on how it's made, the quality of the hide, how the leather was clicked by the maker, the construction of the shoe and the fit to every individual foot. But it shouldn't crease as bad as that patent leather.

For example here's a photo of my TLB split toes, I wear them at least once a week and they are like 8 months old. There is creasing but it's really not a problem at all.
