BI and Ganymede are very different past the opening.
BI is fresh, exotic, spicy, aromatic and fizzy like smelling the vegetation of a tropical jungle on a remote island.
Ganymede is cold, futuristic, luxurious, introverted and beautifully sterile like smelling the sea spray from another world. Honestly one of the most aptly named frags I've ever come across.

It can definitely be a signature. It's not formal as much as it's distant, or standoffish. It's inoffensive when you catch whiffs of it, yet at the same time it's definitely not a frag that screams "mass pleasing" or anything of the sort.

Don't expect anything like BI past the opening. BI has nothing sterile, mineralic or aloof about it and Ganymede completely lacks the energizing spicy-woody fizz of BI.

Ganymede opens with a strongly mineralic but also aromatic freshness that is very similar to BI's, but slightly more subdued, less sharp. It's elusive, airy, not at all a thick kind of scent that sticks to your skin.
It spreads itself around you but never obnoxiously, always in an ethereal manner. The saffron is most likely what gives it the sterile feel, as it settles Ganymede becomes this very cold (not fresh, cold) and inorganic kind of scent that, like BI, you might expect from a place rather than a person, except in Ganymede's case it evokes an artificial and clean environment while BI is more chlorophyllic and lively.
Personally, I don't get a "suede note" but I also didn't get leather at all in Bisch's work for Kenzo, so it might be a problem with my nose. The cleanness is accentuated by floral softness, especially on the drydown, I think the notes are osmanthus and immortelle.
But mainly, Ganymede is all about mineral coldness, and the rest only compliments that central impression. It's a soft and masculine scent but not a mellow or comfortable one, I'd describe it as austere and lonely, foreign, unapproachable. It's wearable at any time and during any season because that kind of coldness is never inappropriate, and the airy, breezy quality of the scent ensures it'll never get cloying. Since it smells so strange and lifeless, it's not really something you might associate with a season or a period of life, hence the versatility.
Ganymede is a scent that is really masterfully composed, it's subtle and glacial, well-named because it both describes a beautiful man in mythology and an alien moon with foreign oceans.

Good question, I'm not sure. They're both equally versatile, BI is louder and makes more of an immediate statement, and Ganymede is a bit classier and softer imo (still has incredible performance though).
I think I'd definitely wear Ganymede instead of BI as a night frag, except in a bar or a club, in which case I'd go with BI. I'd also wear Ganymede rather than BI in a formal environment. Not because it's a formal frag, but it just smells more refined to me. That aside, you can just alternate, there's no situation where one is clearly more appropriate than the other.
