Realistically can you tell the difference on sight between stainless steel and white gold? The Daytona here is WG. They look very very similar to me in pictures but maybe the difference is more obvious in person or in better lighting?

It is. Pictures can always have bad lighting or filters or whatever. With the right light at the right angle you can make a blue dial look black.

In person, though, white gold looks much brighter and whiter than steel, which looks cold and gray in comparison.

I've seen some white gold watches in person at a dealer and honestly I would never be able to pick it out unless it's right next to a similar steel model. The weight difference is obvious but the difference in color is pretty subtle in my opinion depending on the composition.
