Any pilot watch or field watch. Those are generally reasonably sized (not counting Big Pilots), reasonably slim, have lume, and have an understated look that you can get away with wearing it as a dress watch in a pinch.

From what I've heard the Cartier Santos is becoming harder to find in stores.
Cartier has raised its price this year (the 35mm Santos went from 6500€ to 7000€).
The price on C24 for used models is now around 6500€.

Stainless steel isn't noble. Gold is. Dress watches are traditionnally made in gold. Some brands (Cartier, JLC...) make dress watches in steel now but many people find these tasteless.

People talk about the Orient Bambino a lot and rightfully so, but I never see the Symphony brought up. Got the deep blue one, replaced the faux-croc strap with a plain black leather one. Nice on the wrist and the deep blue sunburst dial adds a little visual interest you wouldn't get from the plain black. Like it a lot as a somewhat dressier option.

The older Panerais, series A through G or so, were pretty nice. Tough, durable, relatively inexpensive, unique looking. I didn't mind them using off-the-shelf movements because they were simple and easy to fix.

The problem is that they had no follow-up act. They tried to move way too far upmarket and, in the process, killed whatever made them special in the first place. It's like you had to have been there for the early days of Paneristi.com insufferable. Most of the originals have simply moved on and stayed in contact via other channels, but have abandoned the site.

For rustic I'm thinking you should be looking at 'field watches', which is a military style but also an outdoors watch. Citizen Chandler, Hamilton Khaki field, and the Seiko Alpinist and it's useless compass complication but hey at least it looks outdoorsy.
