From what I read and gathered, a problem with real ambergris is that it makes it harder to keep consistency between batches, being a naturally substance formed under various circumstances having effect on it's smell.
It would also be very expensive for brands making bigger batches, if that is a good excuse considering their profit margins i don't know.
There are also regulations regarding selling and usage of real ambergris in some countries like Australia.

I've only tested the regular Icon and the blue and red one, and the regular Icon is the best.
I want to test the green one but haven't found it yet.

Icon is a citrus-neroli frag with a fruity juniper twist added to it. Lasts long on clothes. Bottle feels like quality. EdP concentration so you don't have to apply 80 sprays. I'm already on the lookout for a backup.

Blue is a boring aquatic without any twists, Red is some weird synthetic pepper with vanilla.

I wore for about 10 years. Yes, its extremely versatile and bitches love it. But it was already reformulated years ago and then again and again, so its very weak now.
The new Eau de Parfum is more similar to the original I had in 2011. It great but its less vesatile because it lacks the fresh part and I only wear it in cold weather. I suggest you to try both anyway.

Ambroxan is a synthetic ambergis type of musk
Amber sometimes refers to things that smell like ambergris but more frequently refers to a fantasy note that smells like a sweet balsamic vanilla kind of note.
If you search by notes on fragratica many just use ambroxan so you can get a good smattering of fragrances that have it.
I can personally recommended Wood & Wood by issey miyake for a nice ambroxan fragrance, fruity lightly woody, lots of ambroxan, good longevity.
Bois imperial is a fragrance that gets shilled here a lot that you might enjoy that also features ambroxan

Just tested the Hermes samples the lady gave me when I bought Voyage
Un Jardin sur le Nil smells great for five minutes — fresh and flowery, very soft and pleasant, I can't imagine anyone disliking this — and then it completely disappears. It's completely unisex, I get no masculine or feminine vibes from it, it's just the kind of pleasant scent you'd expect from an actual garden, so at leas the name is appropriate.
The new Eau de Basilic Pourpre is quite good. It's more dense than the Jardin one, but the longevity seems to be shitty too. It's green and aromatic, I get a hint of spicy sweetness in it that I like a lot, can't stop sniffing my wrist. It's fresh but not too much so it could probably be a year-round scent. Also I find it more masculine than Jardin even though it's marketed as unisex.
In the end both frags are good but the piss-poor longevity means I'll never buy either. I guess Voyage EDP and Terre are the only Hermes scents that actually perform properly.

Sephora is okay but it's a bit crowded so it's hard to smell things properly. Mine doesn't give samples to take home.

Chanel stores are decent, if you ask to take home a few small samples they seem very accomodating. When I go to the mall I usually stop there and ask for a vial of platinum egoiste.
