It’s really tough. The mythical one watch collection is pretty unreasonable I think, you just have to concede too many different things depending on your lifestyle.

A realistic 1 watch collection for me would probably be a JLC Master Control Calendar. It’s complicated enough to stay interesting with a great, well-finished movement and can be dressed down or up to a degree. The only downsides are piss poor water resistance and it’s 40mm, but neither of those are game breakers.

At the end of the day a $10 casio does a better job of actually telling time than a half-mil patek, so don't stress so much over price. Could I have spent that all on one low-end or vintage luxury watch? Sure. But I'd have had to save until now to buy it and, and wouldn't have any options except that one watch. Nothing exists to replace my Casio Databank I used during university, my custom Vostok Amphibia, the Stuhrling my dad gave me, or my favourite G-Shocks. I'm currently looking at getting a Seiko Monster or an homage and putting it on a super engineer bracelet, or a Vostok Classica, or a few other things. But if I couldn't get those, then perhaps a 36mm Datejust like picrel, or a GS Snowflake or a blue-dialed GS like a SBGP007? Although in both cases those would just be to replace similarly styled watches that I'm already very happy with, a Parnis Datejust homage and the Seiko SUR317. I don't have a grail watch, I'm already quite happy with the watches in my small collection.

Nobody, I mean NOBODY other than watch snobs know anything about watches. They will judge your watch based on how flashy it looks. That's it. Women only care what looks flashy, guys only care what looks flashy, interviewers only care what looks flashy. Unless the word rolex is visible on your watch nobody knows what a "Tudor" even is.
