The cocktail time is 34mm compared to the 38 of the Vario. Usually it's better to err smaller so the 34mm might look more proportionate but at 6 inches you could just barely pull the Vario off and it's got a more "all purpose" look to it with the brushed sides and being less loud in general.
But I would not get the specific Vario in your image, because in the first gen Empires the hour hand is a bit too skeletonized and this makes it a little hard to read at a glance. The new seasonal models have a slightly thicker hour hand that works better, although the dial is not the same.

I have a 6.5 inch wrist and I think I could just barely pull off the Sun&Moon. It looks good but for a 6 inch wrist it'll look too large and thick. So sadly that might just be out of the running.
Look up video reviews of the Vario Empire to get a better sense of the size of the hands. Maybe the thinness of the hour hand won't matter to you but my eyes aren't that great and it did bug me. However the way light plays off the hands can make it legible enough anyway. I like the Empire because it is very distinctive, I think the execution of the numbers is absolutely perfect and the brushed sides, again, make it versatile because it's not overly flashy and by dulling down the case a bit it emphasizes the dial. The SDGM001/003 were available for a much cheaper price back then than the SARX models that came later, and they had beautiful sunburst cocktail style dials. I got mine for around $600 and the equivalent models today are damn near $1k without the amazing dials.

It's also worth noting that several years ago when the SDGM001/003 were still being made, many of the sub-Rolex Swiss brands had really mediocre external finishing. I went and looked at an Omega Aqua Terra 2500 several years ago to compare the external finishing to the SDGM003 and the Seiko absolutely BTFO'd the external finishing on the Omega, much less anything you'd find on a lesser Swatch Group brand at the time.

Don’t think of watches in terms of investment if you want to maintain some degree of sanity. They’re similar in cars in that 99.99% of them immediately take a massive value hit as soon as you buy them. This isn’t a bad thing - if you’re savvy, you can get pieces you wouldn’t be able to afford normally from the second hand market. Watches have an advantage in that they don’t record wrist time in the way cars have odometers, meaning you can buy a used JLC for 30% off retail, wear it for a year, and sell it for what you paid or damn near close to it.

In response to your actual question, Nomos/Tudor is generally accepted to be where you are out of the shitter bracket and getting into luxury. Brands like Sinn are a special case in that they’re typically cheaper, but I wouldn’t call them shitters or luxury.

but anyway mechanical/automatic movements are more susceptible to magnetism, shock (both high levels of shock and repeated low level shock/vibration), the PVD will wear, if the crystal isn't sapphire it'll scratch, etc. etc. etc.
I'd rather get a boldr venture, it's a nice field watch with a sapphire crystal, titanium case, and has a more casual look to it that's more versatile.

Now you have to take your chances on micro brands to get what Seiko was giving out for almost free just 5 years ago. Sad really. Orient is promising from what I hear but they’re a wholly owned subsidiary of, you guessed it, Seiko. The percentage of “watch guys” who got into it because of all the iconic sub $500 Seikos is gigantic. The SKX, the SARBs, Seiko 5s, the Monster, the Alpinist and the Cocktail Time probably created more collectors than any haute horology house. It’s depressing when something you love no longer really exists. RIP Seiko, we hardly knew ye.
