Diver watches can or at least should be able to be used when diving with no problems, they are not really used because there are better watches so mechanical watches are basically a relic or used when swimming.

Quartz watches are way superior to mechanical ones, the industry tried hard to become elititst, trying to sell mechanical watches as something for people with money, since quartz was adopted widely for everyday use.They found their niche in nostalgy and people wanting to spend money.

Yes, in terms of raw utility, quartz beats mechanical every time, mechanical is nice because is mechanical, not because it is better and many times is being seen as a status simbol, see how many people here berate cheap watches and call poorfag for posting entry level mechanical watches. My cheap casio Royale has 4 timezones, countdown timer, 24h chrono, light, and at least two alarms, it also has a 10 year battery. No single mechanical watch can have all of that, even the best watch at most will just have a perpetual calendar, which is an amazing mechanical feat but it tells the date as well as my cheap casio, which is also pretty small and does not weight anything.

SS is a good choice, relatively resilient and corrosion resistant assuming it's of relative quality like a 316L. Look into the Grand Seikos with the 9F movement.

It certainly does have far better finishing than anything near its price bracket. Just have to sacrifice on movement to get it. Not that the 6R15 is terrible, just a workhorse automatic that's in the bucket with the old NH3x/4R3x movements and the likes. I'd be going after GS for the buttery smooth sweep along with the finish.

You should get one of these fantastic citizen quartz beauties. Super wearable, impeccably finished goes with anything.
You can get them in a few different colors and they are just beautiful watches, ±10 seconds per year accuracy, perpetual calendar so you never have to fuck with it except to set it after a battery change.
This is a flagship halo product from citizen and they are only sold on the Japanese market.

However i would strongly suggest getting one with the bracelet because if you decide you want it later it will be impossible to find or cost $500. Leather straps really only last a few years if you wear them all the time so get the bracelet and then buy a leather strap to throw on it, you can get great ones for around $50, even the fancy ass alligator ones can be had for $150 to $250.
