Rolex are worth it. They are ultra reliable and accurate and extremely solidly made. If someone wants one expensive watch that will last a lifetime they go Rolex. JLC are also a great buy. You get HH level movements and finishing for a fraction of the price of other brands because they have steel versions. I would say around the $100k area is the limit of fine finishing. Above that price you just pay from more complications and exclusivity.

I understand what you're asking but that also happens with entry luxury brands and common watch brands as well, and it has more to do with the brand itself and how popular it is.
If you're looking for a high quality watch that is worth its price tag and holds its value then start checking the used watch markets and see which brands hold value and which ones don't. Then learn about which brands actually put effort into their movements and quality, and which brands (like Rolex) create artificial scarcity to manipulate the market prices.
But ultimately you're better off just getting what you want and enjoying it.

Jewels are used where you'd have bearings. Having jewels in there means you have less friction as well as less wear over time. That's pretty important for mechanical watches since it means you lose less charge to friction and your movement is more durable. The more jewels, the less friction.

At some point, it was a pretty common tactic for watchmakers to add jewels where they weren't needed just to hike up their prices because "there's sooooo many jewels!!1!". That is the catch but with the modern Rolex movements, such as in the new Subs and OP, the recommend service period is 10 years. Even if you end up breaking even if you sell the watch later on you still get your money back and you wore a Rolex for that entire period.

I need to add a chronograph back to the collection. Tempted to grab a speedmaster but really should add another jap shitter from Citizen or something instead. Speedy is almost too tasteful for my standards.
