I bought the all-metal Casio G Shock in gold. pic related.

I'm actually not a fan of display casebacks. I'd rather a nice engraved caseback. Like some of those classic GS watches with an engraved gold lion medallion are totally fucking sick and something like that is much cooler than what they did for the Godzilla GS where they had a display back but then it's covered by a giant black drawing of Godzilla which is not very visible because of the glass... the worst of both worlds

They have exhibition casebacks so everyone who buys or even looks at these watches can easily see if their watch meets the standard or not. Also these watches are assembled by a tiny group of people who are among the most skilled in their craft in the entire world and they each make a single part of the watch and do the work on 1 watch per day with QC each step of the way. There's like 5 people who can paint numbers on the dials and each one trained for like two years even after being selected for the job.
Grand Seiko is incredible in what they offer for the price. Rolex is in the same price bracket and they make mass produced shitters.

Consider modifying it or look at an SE. I would definitely swap out the hands on a vostok to an aftermarket set. One second closer and raffle times have good options, OSC also has a large array of bezels and bezel inserts to choose from. Personally I got a 170 GMT because I feel like I won't want to modify that watch, it's nice as is.

I need some suggestions on a few things, when I bought this watch it had an odd yellow rust all over the case along with all sort of dents like in the first pic from left, I managed to remove most of the rust and dents on the left side and the ring arround the crystal (theres still polishing to be done) and I need sugestions on straps because the one it came with is really bad, I feel like none of the 18mm straps I have lying arround looks good on it so if you have straps suggestions or inspo pics for a vintage chrono like this it would be great.
The other thing, the reason I feel that no strap looks good on it may be because the dial looks pretty busted which leads me to my second doubt, can a normal watchmaker clean the dial to some extent or do I have to take the watch to some company specialized on restoring watches?

No, I did bought it from an old guy tho, and it looks like he had it stored inside a humid place or something for the dial to end like this.
I'm not worried about the case much, I'm no expert but I can polish most of the rust and dents it came with so it can look like a mirror on some places.The small corners are hard to do but I just need some time. The dial is my only problem for now as I can just replace the crystal if it ends up looking too scratched.

I guess a solution would be to have some kind of activation step so the seconds hand is running normally and then you press a button and it locks at 12 in timing mode, then you press it again to start timing, but that would add complexity that most people don't want or need

So you want a chrono with central running seconds? I imagine someone makes those but the chrono seconds would be pretty hard to read. What you're looking for is a vertical clutch, flyback chronograph ($$$). The vertical clutch will allow you to run the chrono all the time, effectively giving you central seconds, and when you want to time something you use the flyback feature to reset while running.
