The handwind Hamilton's are really, really nice but I'd strongly suggest not to get a the faux-tina. You'll get over it pretty quickly.
ETA, even handwind are fucking bullet proof.

I love seiko but the whole 7s/4r/6r (possibly not the new 6r35, no experience with them) run +/- 30 seconds and if you end up getting into watches properly this will really piss you off.

If you're doing it right there's almost no chance of scratching the watch or if so the scratches will be inside the lug so they're basically invisible. The only trick is to understand how much force you need, it has to be firm but very gentle. I don't think you can polish it out. You can polish out acrylic. Sapphire wouldn't scuff in the first place. The SKX uses Hardlex, a proprietary mineral crystal. Hardlex is not terrible. It is better than normal mineral crystal. But it's not as easily maintained as acrylic or as hard as sapphire.
It would probably be a better investment to buy a third party sapphire SKX crystal for something like 40-50 bucks (they come with antireflective coatings now too so you get a clearer view of the dial and also a sick blue or purple sheen if viewed from certain angles) and then pay a watch repair dude like 10-20 dollars to replace it for you.

I'm self taught through YouTube videos, I watch a lot of SKX modders to see what they do specifically. Lume Shot has some good vids. My setup is a little bare bones- all you really need is a clean work surface, a crystal press, some hand setting/removing tools, and a case back and bezel removal tools. As far as supplies- rodico, silicone grease, and a shit load of finger cots. Don't cheap out on the hand setting tools, unless you've got three hundred bucks to drop I wouldnt recommend using a hand setting press- the cheap ones have awful tolerances and make it that much harder to place the hands. I use the 7404 set from Bergeon which works like a charm- be sure to use a dial protector when you remove the hands. And use electrical tape on the bezel remover, it's easy to scratch up the case.
