Yeah ok. Coupla decades back there used to be Nokla cellphones that were externally a 1:1 match to the original, right down to individual pixel values of the user interface. Some would even take genuine batteries, or compatible ones anyway. However, the moment you'd drop one, you'd find out that Nokla doesn't use nintendium-standard plastic. With a few days' use you'd discover the battery life was shit as well. I don't hear much (good or bad) about Tissot, and you could get some of their offerings with their Powermatic 80 calibre (ETA based) for around that price. I've only ever had a Tissot T-Race quartz, and FWiW I was really happy with it, and it held up brilliantly. Can't help you with their mechanical watches, though I wouldn't be averse to it if my work watch ever karks it and I need a new one.

I don't want to have to use my phone everytime I want to look at the time. At the moment I use a cheap, shit Jacques Lemans watch that does the job at a very basic level, but I'd appreciate something more accurate. I'd also like to feel good about the watch I'm wearing (unfortunately I'm one of those people who create "bonds" with objects they own, and I can't do that with this watch). It's an internal thing, I don't give a shit if anyone notices that I own something nice, I'd actually rather keep it to myself most of the time. Obviously I'd feel great about wearing a Rolex or something on that level, but first of all a watch I paid around 1k for would do that for me if it's a well made watch from a company with some heritage and second of all I don't want to jump from my 150€ mall watch to a Rolex, I'd prefer to build my way to it or an equivalent watch by buying at least one watch that sits somewhere in the middle first.

They sell them with replacement bezel? If you order from meranom and choose an optional bezel, you get the watch with original bezel + the bezel that you ordered.
If you buy a thicker case like your pic related, a seiko bezel will fit fine, but if you buy a smaller vostok, like the 420, the meranom bezels are the best because they are much slimmer and fit the watch much better.

The bezel is retained by a spring, so it's easy enough to take off. Look for "vostok mods" on youtube, the general technique is that you'd either use a plastic spudger (such as what takes a cellphone's back off), a felt-covered dining knife, or a bare dining knife but with sellotape on the shiny bits (strap lugs etc.) that'd be at risk of getting scratches; jam it between bezel and body & twist.

It does no harm to the watch not having a bezel on, or to its water sealing. Some who don't like the "rifle is fine" look put an unmarked bezel on instead, because the crystal is rather tall on the Amfibias (and like 2 mm less so on Komandirskies). That costs as much as a Seiko imitation bezel, though.
