It's not 1900 anymore. Synthetic materials easily win when it comes to practicality and innawoods it comes to that. They're often lighter, dry fast and the outmost layer is waterproof on you. If cotton or wool gets wet, it takes an eternity to dry, while fleece dries quickly.

Practicality and fashion aren't mutually exclusive. Who decides what's more fashionable? Outdoor brands have fashionable synthetic stuff. It really depends on the look you go for, whether you want to larp as someone stuck in the early 1900s or you want to look more up to date with all the practical benefits.

Wool IS damn near waterproof, and that's why it has literally been used for thousands and thousands of years. Modern brands don't (typically) use wool because it is VERY EXPENSIVE to produce.

Near waterproof is not waterproof. If a natural material is better than synthetic, they still use it. If something is expensive, it's built into the consumer price of the end product. They use down frequently in jackets, that ain't cheap either, but you simply can't beat its weight to warmth ratio. Wool doesn't have the upper hand in anything these days, hence they rarely use it.

In many cases waterproof is worse than water resistant. It doesn't breath as well and can end up trapping moisture inside the system. In light-normal rain, while you're exerting yourself physically and producing heat, you're better off going with a soft shell outer layer that lets moisture pass through it. This is the technique the US military employs in it's PCU clothing system. They have a waterproof goretex layer that is used very rarely, while the nylon soft shell layer sees the most use.

Not true. Again to use the US military example, they use synthetic base layers instead of merino wool, and synthetic insulation instead of down in their insulated parkas. This is due primarily to the lesser production cost and durability. Merino is more comfortable against the skin and naturally odor resistant, while synthetics tend to be more durable and cheaper. The difference in insulation is negligible.

It is true that down has the best warmth:weight ratio, however the stats on paper don't always translate well to real outdoor activity. For example, when down gets wet it becomes heavy and cold, rendering the benefits you listed useless. In the PCU clothing system's insulating parka layer they use synthetic insulation.

Synthetics are great, but wool has its place too. Knowing when to use natural vs. synthetic materials is valuable, and will allow you to defend yourself against marketing tactics, and save yourself some money in the process.
