Oxblood is very fine as long as you've got the colors and outfit to compliment it. I'm actually planning on an oxblood or similar color for my next boot.

They should serve you well and last a long time. There's nothing wrong with Chippewa, just expect a lot of loose threads and eventually some pretty ugly creasing. I'm not sure about that specific model but most Chips have a foam insole instead of leather so just make sure they dry completely if they ever get really wet to make sure they last as long as possible.
I do like that they're 360 degree welted since they're gonna be your mountain boots as that helps make them a little bit more water-resistant.

Chromexcel is very soft and stretches a lot. It's great when you first get them as the break-in is easy, but eventually they can stretch to the point where it affects the fit, though that is rare.But they are also not dyed through so the finish is only a thin top layer that is very fragile. The slightest scratch removes the finish and once it's gone it's not coming back. This is especially problematic if they're black as the black wears off to show brown underneath which looks bad most of the time. Polish fills them in but so much for your patina and that cool worn look we like.
Loose grain is the worst part of CXL though. It's happens way more than other brands and looks bad when it happens. Even high end brands that use CXL like Alden are known for it happening. I don't like loose grain and getting CXL is basically asking for it.

CXL is a meme and I fell for it once but never again.

Just find boots you like that don't use it. It can be hard but they're out there. Oiled tanned are great like what Red Wing uses. Viberg and Truman have lots of more exotic leathers and really only use it on entry level stuff. White's has loads of leathers to choose from that aren't CXL and Dayton does too.
Like i said, they exist, you just gotta look for them. Don't know anything about Euro brands though, only American and Canadian ones.

If you're going to wear your boots every day or maybe every other day why spend $600+ on them? They're going to get gouged sooner or later and there's no recouping that damage.
In my opinion, a leather boot of quality and price point beyond a certain degree is a meme. Your feet swell and change size throughout the day, that's why they feel comfy one moment and hurt the next. Also, you don't break your shoes in to your feet, you break your feet into your shoes.
