Unsurprisingly, these are companies which produce a range of movements of different qualities. ETA quartz is fine, and some of their 255.xxx thermoline movements are decent HAQ quartz. ETA mechanical movements come in several grades, with top/chronometer grade movements being very good. ETA also makes the new C07.xxx movement series which is not very good.

Miyota is owned by Citizen. As far as I'm aware Citizen's highest-end movements are not "miyota" branded, so miyota would be restricted to miyota quartz (basic quartz movements that are fine but utterly unremarkable) and the miyota 8xxx and 9xxx mechanical series. The 8xxx series is nothing remarkable, certainly below what you'd get from a standard (lowest) grade ETA. The 9xxx series is actually quite nice, and personally at least I think of it as in between an ETA standard and ETA elabore.

Seiko makes a huge variety of movements of different qualities, in both quartz and mechanical, from the very most basic movements to the 9S, 9R, and 9F series. I believe the 7R series is also considered a Seiko movement, despite only being found in Credor watches.

I personally do not light the lightness. I am a strong guy and like the feel of steel, I would honest to god prefer a tungsten case as that is as dense as gold and unscratchable. Titanium is sooo scratchy. It is like aluminum more than any other metal. If it were not for the "1980s fighter jets were made out of titanium" thing nobody would make a watch case out of that stuff, it's silly marketing nonsense with no basis in a material that is good for the use .

im not exactly weak (535 dl at 205 u mirin?) and it doesnt feel insanely light on a larger watch like the pelagos. not as heavy as steel sure, but plenty of heft imo. tungsten is a great idea though desu, i just dont like how dark it is looks weird. and everyone says that about the scratches but that hasnt been my experience at least. watch has very minimal scratching after a year of daily wear. most scratching i have is on the clasp which is steel.

I certainly do intend to pick up an ultrachron at some point given its status as one of the most tightly specced mechanical wristwatches in history (tied with the GP and zodiac), but its sweep is nothing special.

I have the top right. The best thing about the watch is the dial. It's really pretty. The ones on the left are really ugly, in my opinion.

Zeppelin watches are pretty overpriced, given they're Miyota movements, not really made in Germany, and there's no heritage behind the company.

If you really want a Zeppelin, I say get one on the grey market when there's a sale, like come Black Friday next month. I don't think they're worth the full price.
