I was in the exact same position as you for many months.
I narrowed down my quest for my ultimate daily sporty watch to these same two, and went back and forth a million times.

-The Pelagos spoke to me with its overall rugged look, those square indices and straight hands, that rehaut with the cutouts, its unblemished brand history (compared to Omega), etc.

-The SM300 spoke to me with its greater versatility (more refined than the Pelagos), the display caseback, the slightly superior movement compared to the Pelagos (twin barrels for more consistent torque release, greater anti-magnetic properties, tri-level co-axial movement, ...), the amazing-looking side profile, etc.

Both were "tool watches" at the top of their game; the Pelagos tending more towards the rugged side, and the SM300 more towards the "nicer" and more versatile side.

But then something happened.

The more learned about the movement regulation side of those two watches, the less it made sense to me for a "tool watch" to drift by a few seconds every day, and to be so fragile due to the nature of mechanical movements.
But I had been a mechanical movement absolutist for my entire watch enthusiast career, surely there was no fucking way I was even going to consider a quartz, right?

And then I started reading about the Seiko Tunas, specifically the 300m ones.
>all-metal high-torque movement with 7 jewels that is exclusive to the Seiko tunas and fills the entire case
>unique case design that no-one on earth will mistake for a Submariner homage
>unique history going back to the early 70s
>100% utilitarian design shaped by input from professional saturation divers
>highly domed crystal
>absolutely nuclear lume

Externally, the Tuna (especially the SBBN031) sits in the middle between the Pelagos and the SM300; it has an overall rugged brushed look like the Pelagos, but some nicely polished details like the SM300 (top edges of the shroud, the grip notches on the rotating bezel, the shroud screwheads, the little lugs) making it a bit more versatile than the Pelagos.

The more I read about the Tuna, the more I finally understood why mechanical tool watches like the Pelagos and SM300 never felt quite right.
The Pelagos and SM300 nailed the body of a "tool watch" (nicely finished but utilitarian metal construction and high-contrast lumed dial); but the soul of a nice and durable "tool watch" can only be a rugged, tough, durable, serviceable quartz like the Tuna's 7C46.

The Omega cal 613 is based on the 601, which is in the a slimmer, manual wind version of the 56x. The y13 incorporates an unusual date quickset; to advance the date, you pull the crown out past the time setting position, which jumps the date forward by one.

I recently got a Steinhart Ocean 1 and my biggest issue is that the lugs come out flat with the watch (they dont curl down with the wrist) Does the SARB have this issue? They dont sell them in my country so ive never had opportunity to try one on.

Also on a scale of 1 to 10 where 1 is a mcdonalds vanilla shake and 10 is a baileys with milk. Where does it sit on the scale?

I think I have a movement with this sort of pull-out crown date execution though I can't remember which one exactly. I think it was my Raketa Frankencalendar.

This solution is usually just a claw that pushes a tooth on the wheel, either when you push in or pull out the crown. One kinda unusual example is the Seiko 6106C, where a short press of the crown changes the date, a longer changes the day too.

Not vintage yellow but not pure white, more like off-white, eggshell or such.
On a side note you can still find them in Japan for around $300, I just picked up a SARB033 in Tokyo last night at that price and have seen a few 035 around. Have to do a bit of digging but they are there.

The color of the dial really depends on the lighting. It won't really look cream unless it's in direct sunlight. Most of the time indoors it looks white and the difference between the date window and the dial isn't noticeable unless you're examining it up close. The dial is also technically perlescent, but you will almost never see that unless you are trying to get the light to reflect off it just right.

The second and probably last watch I've purchased. It's satisfying enough that I don't lust after any other watch right now.
The start-stop pusher takes an alarming amount of pressure to activate and the first time I hit reset, the chrono second hand went back to about minus-three seconds. The next dozen or so resets have arrived at the expected 12 oclock position so hopefully it's not damaged.

a magnetized watch can exhibit all sorts of irregular behavior. it can slow down rate in all positions, but it can also increase rate in all positions. it also can only effect a few positions. so there's no guarantee that it will help the problem, it could make it run worse (until regulation). demagnetizer is part of any regulation, so if there is no other issue that causes the timing to change after a regulation, demagnetizer usually helps
