cheaper glued soles commonly peel. the welt can hold a shoe together even after the glue fails although the shoe should be repaired in that event, regardless. unless the upper sheers in a dramatic way, you can always repair them, and it's not like a welt prevents sheering.

the sole is bound in place with glue first. the welt is something of a failsafe.
starting at about 1:15 you can see them painting on glue in between stitching on pieces of the inner and outer soles.
