Is the crux of your argument "I think rounded cases and straight lugs and flat, minimally decorated dials are great, and worth paying multiples above other watches with the same movement that are about equivalently finished"?

Don't get me wrong, I have nothing against ETA movements - just against them priced way above other watches with the same tech.

Speaking of bragging about higher-frequency quartz, Longines made their ultraquartz in the very early 70s. While other quartz watches of the time were using 8KHz crystals, Longines made a major advertising point of their watch's 9KHz crystal. The ultraquartz, like the Beta 21, used an index wheel system to advance the hands, running at 170Hz. It used a feedback system, similar in philosophy to a spring drive, to keep the timekeeping stable. Rather than using an integrated circuit, the watch used discrete electric bits soldered into the movement. The ultraquartz was unsuccessful commercially due to its cost and unreliability.

Yeah, Longines with their messy Ultra-Quartz movements.

The varieties of quartz movements from the 70s is one of the most interesting periods in the history of watches.
