Nekomotion does one-off sneaker customs for Seltie sometimes, this is the only one I particularly enjoy, but they definitely all are pieces of art in their own sense.

I'd say CCP dips are going to be the most accessible as far as that idea goes though.

Personally I'd go with the Stan Smiths, they have a silhouette that's a lot lower focused, the large sole on the AF1's look pretty silly to me if it isn't the highs or mids.

(Just posting random pictures of neat shoes at this point by the way, though these are AF1's, so somewhat related.)
