No, they didn't. They typically wore frock coats during the heyday of fully functioning plantations. By the time seersuckers in modern cuts became fashionable in the American South, the Second Industrial Revolution was ending and WW1 was about to kick off. Furthermore the white linen suits and seersuckers were worn by enough non-plantation owners around the world that it's not really a look associated with them.
