Brands like Patek, Audemars, LeCoultre etc have always produced thousands of watches a year since the industrial revolution.

watchmakers have always used ebauches, used even more so today... what does that have to do with anything?

Mechanical watches have been mass produced since the late 1800s. The major difference now is the swiss don't bother making cheap mechanical movements. Its a pure luxury industry.
