I usually go for anybody's merino (check Sierra Trading Post for cheap ones) or Patagonia Capilene for synthetic. Check their Web Specials section on their site, or get them really cheap used on eBay or at any thrift store around rich white people. They're nearly indestructible but technically underwear, so they go cheap.

I saw pic related recently courtesy of the best bag blog on the Internet, and I think it's a sharp idea. Pannier converts to crossbody sling.

Normally I'm not keen on sling bags, but for something you keep on the bike most of the time and occasionally remove it seems perfect.
