If you want a custom order you can go through their website or through one of their major stockists like Hide.

As another anon said, different leathers have different looks and properties. Deerskin and calf leather are softer and more buttery, bison, pig, and horse are stiffer. Some, like pig and ostrich, have a stippled or grained look and feel to them.
You can also get most models in reverse leather, which is just like it sounds. It has a similar look to suede but suede is split grain (they split the leather along its edge) and reverse leather is full grain (whole uncut), which makes it much more durable. All of my reverse leather footwear has aged beautifully and can withstand rain, dirt, and mud as long as you clean and brush them.

Hope this helps!

pic related are my oldest pair of guidis

I dunno. I prefer my Guidis because they're slimmer.

Those are nice though. I like them a bit more than the aw11 Balmain Rangers. I sold my pair because the toebox is so huge.

Guidi backzip combats

I also have a strange attachment to a plain green Urban Outfitters tee shirt that I bought like ten years ago. I think I just appreciate how it's held up better than all the more expensive tees I've owned. It's only just now starting to fray.

I have these Guidis. Probably get more compliments on these than anything else in my wardrobe. Good slim combats are really versatile. Chunky ones work well for cooler weather when you can balance them out with a heavier top half.
