Once you hit your 30s/40s and you've somewhat made it (family, good carreer, nice car, etc), you kinda get bored and need some spicyness in your life.
Watches provide that, because they're nice, have a bit of "tradition" to them and can also be seen as investment. Sure you can be rational and say "I'd rather spend 20k in shares or whatever" but it won't be fun. Going to the jewelry store, trying watches, spending a stupid amount of money on a Rolex and showing it to your friends is new and exciting. Pretty much like going to a business trip and cheating on your wife with some hooker.
