G-Shocks are ridiculously sturdy and many of them pack in a bunch of different functionalities, even at Swatch's price point. Meanwhile, Swatches are sorta splash resistant and at most have a date window.

We can't really know for sure. Rolex in particular has its own problem with overpricing and artificial scarcity thanks to their system of authorized dealers. A good example of swiss price gouging and outsourcing would be Tag Heuer, though they claim to be committed to ending it now that they have changed their corporate heads and direction.

H. Moser recently took the piss off the label in a pretty funny way, claiming that they could easily prove to their customers that 95% of their assembly and value comes from Switzerland directly and that the remaining 5% are mostly raw materials that can't be swiss in origin ; and that when your customer pays 100 000 bucks, they are entitled to full transparency instead of a vague label full of loopholes.
In a way, Cartier has also changed optics in that regard since they've always been a bridge between the french jewelry tradition and swiss watchmaking, and they've decided to gradually move more and more of their production to France and pursue other labels.
Others doing it are individual makers doing everything in the workshop, commanding prices well above 100 000.

Honestly, if you really want to explore watches, look into the 100-500€ range. You star to have a lot of really interesting stuff from the big brands offering some staples to microbrand madness.
As for Casio and Seiko, they all have some interesting watches in all ranges, really. G-Shocks are their own little world.
And I can't recommand Vostok enough. If you don't mind the POCCNA school of design, they are some of the best value out there.
