I used a fairly cheap urban classics jacket that was like 60€, as I didn't want to fuck up a >100€ jacket, but I wanted it to be high quality enough to actually wear it.

yeah, there are iron on patches, but I'm not sure, wether you'd fuck up the material. It could melt or something like that.
but sewing isn't that complicated, as long as you're not applying the patches to the sleeves. But depending on the size, it can take like an hour to sew on a single patch, when you're doing it for the first time. Pro tipp: get yourself a thimble, they are cheap and you won't fuck up your fingertips.

90% of the time they are shitty, but here are some points that make a good vest/jacket in my opinion, also pic related is mine:

-good patch selection that reflects interest in the music and doesn't look like the owner just clicked on a web shop for metal merch and copped all the patches from the first site. I won't judge someones taste in metal for a modern slayer patch, but if the vest is just bands like Amon Amarth, FFDP and shit like that, they shouldn't have started a vest in the first place. It should reflect your individual interest and likings in metal and when there are only entry level metal bands, then the interest can't be that high. And buying merch is a great way to support underground bands.

-the patches need to be arranged in a pleasing way. Getting a vest and plastering it to the point where no denim is visible anymore looks like shit most of the time.

-the jacket or vest should fit the person.

-spikes and studs can be cool, but arrangement is key again.

-don't fuck up the colour scheme. If you're into black metal, you'll most likely have solely black/white patches. If you sew a colorful patch between them, it may stand out in a bad way, think about this beforehand.
