For those who haven't seen the plague masks before (i'm sure you all have, but hey), they were worn by doctors during the time of the Bubonic Plague in Europe.
The idea of infection as we now recognize it did not exist, but people were afraid of "bad air", "foul humors" and the like.
The beak was filled with potpourri or spices, to mask the scent of death.
