Semantics, but there are few brands that actually have selvedge all the way up to the waistband (I believe some Imperials do). Most selvedge, like you said, do run up to midthigh, however.

Might be hard to see but if there's an actual seam, then it's selvedge. Check out >>8655650 where there is no seam. Alternatively, some brands do stitch on a stripe on the two ends where the selvedge edge should be. This kind should be extremely obvious, however.

Slub is when the denim is woven with irregularly sized yarns. When the yarns are sporadically thicker/thinner, the denim gets a sloppy look to it. The twill isn't as perfectly straight and diagonal. Pic related.
