It's not a turban, it's a chaperon. It has no relation to the turban.

The turban develops out of two styles. The first comes from the Middle East, developing ultimately from the Sumerians. In short, if you live in a hot sandy place, you want to drape breathable fabrics over yourself. But they get in the way, so you bunch them up on your head. Something similar develops in India, independently (or rather, if it isn't independent it's so fucking far back that it might as well be).

The chaperon is an independent European invention. Peasants would wear a thick cloak with a hood. The form could vary, sometimes it was basically a hoody, sometimes it was a tanktop with a hood, it doesn't really matter, point is it has a hood. To save time, a long "tail" would develop on the hat. When they wanted to cool down, the wearer would take the cloak off, but put the hood on the head, so it would "hang" off of the head. Eventually, the garment would be wrapped around the head to keep it from dangling, using a sleeve (if it had one) or the long tail to act as a fastener.
